I have included this particular one of my NHSS recipes as a suggestion to those of you who will be preparing holiday dinners for family and/or friends.
I know what some of you may be thinking: “Eggs for dinner? Everyone eats them for breakfast.”
Not everyone. For my wife and I, eggs are a dinner-only food. Our breakfast always consists of fruits, coconut, chia seed and either nuts or other seeds. I believe this is a much better way to begin the day.
We have long been ovo-vegetarians. In other words, aside from organic, brown eggs, our diet is purely vegetarian.
Eggs are a rich source of highly bioavailable protein, vitamin B12 and other B-vitamins, vitamins A and D, Omega-3 fatty acids and much more.
The fact that most people view eggs as a breakfast food is simply a cultural perspective, not a therapeutic nutrition one. Eggs are actually an excellent dinner food.
We only have one way of preparing eggs – the 3-minute egg. The attached recipe provides complete instructions for preparing this delicious, nutritionally rich, easy-to-prepare meal, including instructions for our method of preparing 3-minute eggs. This method preserves all the nutritional bounty of eggs. It also is the most digestible form of egg preparation.
We never fry eggs as this makes them much harder to digest and introduces super-heated, oxidized fats into the menu. Avoid fried eggs.
